Ingredients
1 cup cooked USA red lentils (about 1⁄2 cup dry)
8 Roma tomatoes, diced
2 cloves garlic, minced
1⁄2 teaspoon lemon juice
1 cup diced red onion
1⁄4 cup chopped fresh cilantro
2 jalapeño peppers, seeded and finely diced
Method
In a medium saucepan, combine 1 cup water and 1/2 cup red decorticated lentils. Cook for 5-6 minutes. Drain off any excess water.
Combine all ingredients and chill. Serve with chips.
