Ingredients:
2 tbsp. margarine or butter
2 medium peeled and finely chopped onions
3 cloves minced garlic
2 chopped tomatoes OR 1 small peeled and chopped apple
3 tbsp. flour
3 tbsp. curry powder or to taste
2 cups vegetable stock
2 cups chickpeas (cooked or canned- drained and rinsed)
2 cups loosely chopped spinach
½ cup seedless raisins soaked in warm water
Method:
1) Heat margarine or butter in a large skillet, add onions and sauté until golden, add garlic and tomato
2) Cook over low heat until tomatoes (or apples) are soft
3) In a small bowl, combine flour and curry powder, stir into onion mixture
4) Cook to blend into thick paste
5) Using medium heat, gradually add stock, chickpeas and spinach, stirring often
6) Add raisins and cook to desired thickness
7) Serve over rice or white fish
